Kitchen Stories: Paleo Chocolate Chip Cookie

Ingredients
  • ¼ cup coconut oil, solid at room temperature
  • ⅓ cup coconut sugar
  • 1 egg yolk, room temperature
  • 1 teaspoon vanilla extract
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup (4 oz.) blanched almond flour
  • ½ cup (3 oz.) chopped dark chocolate
  • ½ teasoon flaky sea salt, to sprinkle on top (optional)

Directons

  1. Preheat the oven to 350ºF. Lightly grease a 5 inch cast iron skillet with coconut oil.
  2. Beat together the coconut oil and coconut sugar until smooth. Add the egg and vanilla and mix until smooth.
  3. Add the almond flour, salt, and baking soda to the wet ingredients. Mix until well incorporated. Fold in the chopped chocolate.
  4. Press the dough into the prepared pan, sprinkle with flaky salt if using, and bake for 15-18 minutes or just beginning to turn golden brown around the edges. Remove from oven and serve warm – alone, or with whipped coconut cream or non-dairy ice cream

Let’s Get Cooking: Baked Garlic & Dijon Salmon

Seafood

1 1/2 lbs Salmon

Produce

2 Large or 3 small garlic cloves
1 Lemon, slices
2 tbsp Parsley

Condiments

1 1/2 tsp Dijon mustard
2 tbsp Lemon juice, fresh

Baking & Spices

1/8 tsp Black pepper, ground
1/2 tsp Salt

Oils & Vinegars

1/8 cup Olive oil, mild

 

How to Make the Best Baked Salmon:
Preheat the oven to 450˚F.

1. Line a rimmed baking sheet  with foil. I  didn’t line the dish and later regretted it while I scrubbed fiercely for a day and a half.

2. In a small bowl,mix together: 2 Tbsp chopped parsley, 2-3 pressed cloves garlic, 1.5 tsp Dijon mustard, 1/2 tsp salt, 1/8 tsp of pepper, 1/8 cup of olive oil and 2 Tbsp of lemon juice.  Smell it; it’s simply amazing!

3. Slice salmon into even portions: I ended up with 4 generous cuts of salmon. Lay them onto a lined baking dish with the skin-side-down.

4. Generously brush all sides of salmon with sauce and top with fresh slices of lemon.

5. Bake at 450°F for 12-15 min or until just cooked through and flaky. Don’t over-cook or it will be dry. There you have it! An easy, excellent dish.
